Amala: The King of Swallows

With due respect to my fellow Nigerians and our love for swallow, varieties of swallow are prepared by them of which the king of swallow is not an exception.

The king of swallow can be qualified as a sweet and healthy meal with less calories, more of protein and carbonhydrate and prepared from yam flour which is white in itself but turn to be in rich brown colour when added to boiled water and cooked.

This king is nothing but the special traditional meal of the Yorubas in South West Nigeria called AMALA. Usually it is eaten alongside with soup such as Ewedu (jute leaf soup), Gbegiri (beans soup), Okro soup and Efo (vegetable soup).



However, the king is a simple meal that just needs boiiled water which the yam flour will be poured unto, turn with a wooden stick quickly and then putting it back on a low heat after adding little hot water. It should be turned after 5 minute again until a smooth lump is formed, then it  could be packed.

Amala is the lightest swallow which makes it easily digestable and that is why it becomes the king of all swallows. Now going by how Yorubas call it AMALA TOH FELE.
